Vegetables / Chipotle Mashed Potato Recipe
Fluffy and wonderful, there are few things like really great
- 2 1/2 pounds russet, or baking potatoes, cut into 1-inch chunks,
about 7 to 8 cups of cut up potatoes
- 1/4 cup milk or half-and-half
- 1/4 cup soft butter
- 1 or more Tablespoons Knox's
Chipotle BBQ dry rub
Wash and peel your potatoes.
In a 4 quart sauce pan bring potatoes and water to a rolling
boil. Reduce to a simmer, cover and boil for about 20 minutes
or until potatoes are tender.
Drain potatoes and place in a large bowl. Add milk or half-and-half
along with the butter.
With an electric mixer, whip potatoes, butter and milk or half-and-half
while adding Chipotle BBQ dry rub. Continue until smooth and creamy.
Serves 4 to 6 depending on how hungry they are.
