Beef / Chipotle BBQ Hamburgers
Chipotle BBQ hamburgers, the spice of life.
The temperature is officially spring-like and the grill has
been dusted off. Burgers are in our future and I am excited.
I personally love hamburgers. Not necessarily because of the
mouth watering thought of choice ground beef with the fat slowly
dripping into the fire creating a smell that is uniquely relaxing,
but because of the versatility of the sandwich.
I know a serious bunch of ways to make great burgers but the
first choice of the season was Chipotle BBQ Burgers.
First we prepared the grill by pilling up Mesquite charcoal
and firing it up! Then we took about 2 pounds of ground beef
and 2 tablespoons of Knox's Chipotle BBQ Rub. Mix these two
simple ingredients together. The smoky smell of the Chipotle
is a teaser, just wait. Make patties and put aside. Also try
this recipe using ground Buffalo.
When the grill is hot, flatten out the coals. Toss those patties
on the grill and prepare yourself. As the spices warm up and
release, the smell blends with the cooking burger. It is excellent.
Grill for about 4 or 5 minutes per side. Do not press the burgers.
Pressing them squeezes out succulent juices and flavor.
We garnished our Chipotle BBQ burgers with lettuce, tomato
and onion. We made a Chipotle Mayonnaise to bump up the experience
and sat down to a slice of grilling heaven.
Chipotle Mayonnaise
Mix together and chill. The mayo will take on a brownish color
because of the Chipotle and Guajillo peppers but the flavor
is not a dull one. Smooth creamy mayo, smoky aroma and a spicy
bite all in one shot.
