Cracked Pepper Salad Dressing

For the love of home made salad dressings we have made a dressing that is tasty and easy to make. Knox's Cracked Pepper dry rub was created out of the love for choice cuts of meat and the earthy, spiciness of cracked black pepper. Now we have created a dressing recipe that makes salad just as delicious.

Knox's Cracked Black Pepper Dressing
1/4 cup Sour Cream
1/4 cup Mayonnaise
1/3 cup Butter Milk
2 Tablespoons Lime Juice
2 Tablespoons Knox's Cracked Pepper Dry Rub
Pinch of Salt

Mix together and chill.

This light and slightly spicy dressing is excellent over salad or as a dip for vegetables.

Chipotle Corn Bread

We made corn bread last night to accompany dinner last night and made Chipotle corn bread. It was good. Hearty corn bread with the slight smoky aroma of Chipotle with a bit of a spicy bite. Below is the recipe.

Chipotle Corn Bread

• 1 cup Corn Meal
• 1 cup Flour
• 2 Tablespoons Sugar and sometimes a Tablespoon of Honey
• 2 or 3 teaspoons Baking Powder
• 1/2 teaspoon Salt
• 2 Tablespoons Knox's Chipotle BBQ Dry Rub
• 1 cup of Milk
• 1 Egg
• 1/4 cup Vegetable Oil

Preheat your oven to 425 degrees.
Mix together all the dry ingredients.
Mix wet ingredients into your dry ingredients. Stir and fold until blended.

I use our iron Dutch Oven, mainly because I cannot find my 9 inch iron skillet.

Place 1 or so Tablespoons of lard in the skillet and place in the oven for 10 minutes to melt the lard and heat the skillet. Once the lard is melted and the skillet is hot, remove and swirl lard to cover bottom of the pan.

Pour batter into skillet and place in oven. Bake for approximately 15 minutes. Check doneness with a toothpick by inserting it into the center. If nothing sticks it is done.

Let cool and remove by placing a dish over skillet and turning upside down to allow corn bread to fall onto plate.

Serve with butter and or honey preferably accompanied by a large bowl of bean soup or chili.

Other Corn Bread Ideas:
Use the recipe above but replace Chipotle BBQ dry rub with ingredients listed. Depending on the strength of the flavor of the ingredient you may want to add more or less the same amount.

Chipotle bbq hamburgers, the spice of life.

The temperature is officially spring-like and the grill has been dusted off. Burgers are in our future and I am excited. I personally love hamburgers. Not necessarily because of the mouth watering thought of choice ground beef with the fat slowly dripping into the fire creating a smell that is uniquely relaxing, but because of the versatility of the sandwich.

I know a serious bunch of ways to make great burgers but the first choice of the season was Chipotle BBQ Burgers.

First we prepared the grill by pilling up Mesquite charcoal and firing it up! Then we took about 2 pounds of ground beef and 2 tablespoons of Knox's Chipotle BBQ Rub. Mix these two simple ingredients together. The smoky smell of the Chipotle is a teaser, just wait. Make patties and put aside.

When the grill is hot, flatten out the coals. Toss those patties on the grill and prepare yourself. As the spices warm up and release, the smell blends with the cooking burger. It is excellent. Grill for about 4 or 5 minutes per side. Do not press the burgers. Pressing them squeezes out succulent juices and flavor.

We garnished our Chipotle BBQ burgers with lettuce, tomato and onion. We made a Chipotle Mayonnaise to bump up the experience and sat down to a slice of grilling heaven.

Chipotle Mayonnaise

1 Cup mayonnaise
1 Tablespoon Knox's Chipotle BBQ Rub

Mix together and chill. The mayo will take on a brownish color because of the Chipotle and Guajillo peppers but the flavor is not a dull one. Smooth creamy mayo, smoky aroma and a spicy bite all in one shot.

2 pounds ground beef
2 tablespoons Knox's Cracked Pepper BBQ Dry Rub

This blend makes a hamburger more like a steak burger. The earthiness of the cracked pepper compliments the flavor of the ground beef and do not underestimate the heat of cracked pepper. This burger has a bit of bite.

Cabrito, by any other name is a goat, the other red meat.

In the last couple of years, because of the efforts of a family member, have become aware that most of the world eats goat, Cabrito. American do not eat much goat but it seems almost everybody else does. Indian cultures eat goat, Jamaicans eat goat, Spaniards eat goat, Mexicans eat goat.

We decided to find some Cabrito and find out for ourselves. We found two very nice Cabrito steaks at our favorite Mexican Market. The steaks had the look of beef but leaner and smaller. Also it was not cheap.

To prepare the meat we rubbed it in soft butter and then generous proportions of Knox's Jamaican Jerk bbq dry rub. They where baked until the meat thermometer registered medium rare for lamb. Our meat thermometer does not have a setting for goat.

They cooked up rather nicely. It tasted like beef but different, not sure how to put it, a bit like lamb. We liked it very much although next time I think we will try a curry.

Goat has as little fat as chicken and has less saturated fat. It the same amount of protein or more than beef, lamb, chicken or pork and more iron (http://www.triquestboergoats.com/cabrito.htm).

I look forward to grilling season with our new found Cabrito. Maybe we will try some Cabrito burgers blended with Knox's Chipotle BBQ rub. YUMMM!

New technology always stumps us Knox's, well except for a couple of them. This blog is a bit confusing. We wanted a space we could post relevant and up to date information and this was the solution.

Maybe in a couple of days I will get it together and figure out how to work it.
