Pork Delight Dry Rub
A newer family recipe that we have been playing with for
a while. Our Pork Rub was created to give pork all the wonderful
flavors and smells that compliment excellent pork; grilled,
baked, roasted or in the pan. We carefully blended the standards
such as paprika, mustard, garlic and onion. Then we juiced
it up with coriander, ginger, cinnamon and mace. Sweetened
the smell with the apple aroma of chamomile and cinnamon.
Knox's Pork Delight Dry Rub is exactly that, a delight.
How to use Knox's Pork Delight Dry Rub
Sprinkle liberal amounts of Knox's Pork Delight Dry Rub
over pork and massage. Rubbing infuses the flavors directly
into the surface and helps release the flavor in the rub.
For easy clean up, place meat in a zip lock bag. Sprinkle
with liberal amounts of Knox's Pork Delight Dry Rub and
rub from outside the bag.
Dry Rub vs Marinade
Dry rubs are like a marinade in a way. You can apply dry
rub and cook immediately. You can also rub pork and wrap
it up and put it in the fridge as long as you need to. You
can mix Pork Delight Dry Rub with olive oil to make a wet
rub. Mixing with citrus makes and excellent marinade. Below
is a simple recipe for making a pork marinade. If you apply
rub or marinade and refrigerate, for best results, try to
bring meat to room temperature before cooking. Also allow
meat to rest a couple minutes after cooking to allow moisture
to redistribute. This allows the meat to be moist and not
dry out when you cut into it.
Pork Delight Cubana
This is a simple marinade for pork chops or a small tenderloin.
• 2 teaspoons Pork Delight Dry Rub
• 1/3 Cup Orange Juice
• 2 Tablespoons Lime Juice
Place ingredients in a re-sealable bag with your pork chops
and shake well. Allow to sit for 30 minutes before cooking.
