Most people like hot sauce. A home-made hot sauce is really easy to make and very tasty. Have clean jars ready so when you are done you will be ready to pour the hot hot sauce into the clean jars in short order.
You can use whatever peppers you like. Red Jalapeno's make a nice sauce, roasted red jalapeno is a touch better. Red serrano peppers can be used for a spicier sauce and substitute some orange habanero peppers for a blazing hot sauce.
Ingredients:
- 4 cups finely chopped ripe hot peppers, stems removed
- 8 cloves garlic, peeled
- 2 cups apple cider vinegar
- 1 tablespoon salt
- 1 tablespoon sugar
- 2 cloves, ground or a pinch of ground clove
- 3 allspice berries, ground or pinch of ground allspice
- 1 bay leaf
- Sterilize your jars.
Directions:
Place peppers, garlic and vinegar in blender and blend smooth. Pour into a pan and add remaining ingredients. Open a window as it could get hard to breath without proper ventilation. Slowly bring all ingredients to a boil while gently stirring, reduce to a simmer for 5 minutes. Cool just enough to be able to pour into bottles or jars. Store in dark cool place. Enjoy! |
