Vegetables / Jamaican Pumpkin Bake Recipe
We have been participating in the local farmers market this year which has giving us access to local, prime, vegetables. Our friend Frank had planted pumpkins behind his Grandmothers house and he gave us a few for halloween this year. We like pumpkin, to eat, and came up with the following.
It is a nice side to chicken and has a bit of an island flair to it. Very nice.
Jamaican Jerk

You will need the following;
1 7or8 inch pumpkin, gutted.
1 small onion, diced
1 carrot, same condition
1 Stalk of celery chopped small
1/2 sweet potato, cut into bite size chunks
1/2 small butternut squash, ditto
1 fat clove garlic crushed & minced
2 Tablespoons soft butter
1 Tablespoon brown sugar
1 Tablespoon Knox's Jamaican Jerk dry rub spice blend.
1 teaspoon thyme
1 teaspoon ground ginger
1/4 teaspoon cayenne powder
salt & pepper
1 Cup chicken stock.
Put the pumpkin on a baking pan. I put a ring of foil around it to make it more stable.
Toss everything except the chicken stock together in a bowl. Put it in the pumpkin with the chicken stock.
I baked it at 400 degrees for 1.5 hours.
